This is the perfect dessert for lazy vegan girls like myself who want a quick, healthy and high protein dessert. Can cookie dough be nutritious and yet still creamy, thick and luxurious? As they say the proof is in the pudding.
How to eat high protein on a vegan diet?
Contrary to popular belief, it is very easy to get your required protein needs whilst eating a vegan or plant based diet. The obvious meat replacements help but they are often loaded with salt and additives. Plant based alternatives such as tofu, tempeh, beans, chickpeas and nuts are healthy high protein foods. Now if you want a sweet dessert that is full of protein, then vegan protein powders if your answer. Available in all sorts of delicious flavours, they have been the solution to my persistent sweet tooth. I probably eat this vegan cookie dough at least 3 times a week and as it’s healthy (and more importantly tasty), I have no regrets. It has 30g protein and so work perfectly as post gym snack.
The Ingredients
I promise this vegan protein cookie dough tastes just as luxurious and creamy as any store bought variety. Plus the ice cream or should that be nice cream(!), is naturally sweetened with maple syrup adding a taste of caramel making this cookie dough ice cream extra indulgent.
When you find a vanilla protein powder that tastes amazing it really is something worth savouring. Now I’ll be honest, a lot of vegan protein powders are chalky, too sweet or have that awful artificial flavouring. I use Vivolife protein powder (not sponsored!). It has a really smooth and natural vanilla flavour. We’ve all been there with the dreaded clotty protein powders that stick to the bowl and your spoon. Thankfully Vivolife is really verstatile; it works well warmed up in my protein porridge, whisked up to make protien shakes and also in high protein treats like this cookie dough ice cream.
The Method
This plant based ice cream is ready in under 20 minutes. Simply blitz the oats in a food processor or nutribullet for 20 seconds until it forms a floury consistency. Pour out into a bowl and mix in the protein powder, peanut butter, dairy free milk and maple syrup. Now you could serve it as is but I always add in a scattering of dark chocolate chips. Sweet enough to be a treat and dark enough add a rich and more mature flavour.

Vegan Protein Cookie Dough
Ingredients
- 20 g rolled oats
- 1 x 30g scoop vanilla protein powder vegan
- 1 tbsp smooth peanut butter
- 1 tbsp maple syrup
- 85 mls oat or almond milk
- 1 tbsp / 15g dark chocolate chips
- 1 tbsp maple syrup to serve optional
Instructions
- Blitz the oats in a food processor to a flour like texture.
- Pour the oats into a small serving bowl and add the protein powder, peanut butter, dairy free milk and maple syrup. Mix until the mixture thickens up and is well combined.
- Then stir through the chocolate chips. Place in the freezer for 15-20 minutes.
- Serve and drizzle with extra maple syrup if desired.
