Vegan french toast is the ultimate weekend breakfast. This is a quick, simple and delicious plant based recipe for french toast that will please both vegans and omnivores alike.
So Why Make Vegan French Toast?
Because it’s goddamn delicious! Pillowy soft white bread cooked in sizzling dairy free butter until the edges crispen just tastes so good! Plus vegan french toast is a natural source of plant protein, dairy free and can easily be made gluten free, so it’s a definite crowd pleaser.
What is chickpea flour?
Chickpea flour is exactly that: a flour made from ground gram chickpeas. It also goes by the name Gram or Besan flour. Please don’t be put off by the sound of chickpea flour; I promise that your toast won’t have any chickpea flavour, nor will the french toast have a grainy texture.
Instead, the chickpea flour whips up into an irresistible eggy batter making it perfect for vegan french toast. Furthermore, chickpea batter is highly nutritious, being high in protein and a great source of fibre. Once cooked, gram flour has as a subtle, nutty texture allowing the other ingredients to shine. Chickpea flour is easily available. It is now sold in most supermarkets and if not it can certainly be found in your local Asian food store.
The Ingredients
- Good soft white bread is best for vegan french toast. Simple store bought is fine or you can get fancy and use ciabatta or french bread. Just ensure that your bread is soft so that it will easily absorb your ‘eggy’ batter.
- Any dairy free milk can be used to make vegan french toast. I prefer oat milk as it is naturally creamy, whips up into a pleasant frothy batter and simply tastes lovely. Soy milk has a strong taste and can overpower the other ingredients and almond milk is invariably too thin.
- Cinnamon, salt and vanilla extract add sweetness and depth to the dish.
The method
To make your plant based toast simply combine the chickpea flour, oat milk, vanilla extract, salt and cinnamon in a bowl. Whisk until the batter is well combined and frothy, then simply dunk in your bread. Leave for 15-20 seconds then flip over to saturate the other side. Heat the butter in a frying pan over a moderate heat. Cook the bread on one side for 3 minutes, flip and fry for a further 3 minutes. Serve with berries, syrup and vegan greek yoghurt.

Vegan French Toast
Ingredients
- 6 tbsp chickpea (gram) flour
- 225 ml oat milk unsweetened
- 1.5 tsp vanilla extract
- 0.75 tsp ground cinnamon
- Pinch of salt
- 2 tbsp vegan butter
- 4 thick slices of soft white bread optional gluten free bread
Instructions
- In a wide dish, whisk the chickpea flour, oat milk, vanilla extract, cinnamon, and salt.
- Heat one tbsp of vegan butter in a frying pan over a moderate heat.
- Dip the bread into the chickpea batter and leave for 20 seconds. Flip over and saturate the other side for a further 20 seconds.
- Add 2 slices of bread to the hot pan and fry for 3 minutes. Flip over and fry for a further 2-3 minutes.
- Serve and keep warm while you prepare the next serving. Melt a tbsp of butter in the pan and repeat the steps of soaking and frying the bread.
- Serve along with fresh berries, vegan greek yoghurt and syrup.
