An oh so simple recipe for an easy tofu scramble. This is a delicious scramble that takes only 10 minutes from prep to plate. Creamy and buttery, with a spot on eggy flavour, this scramble makes for a great plant based breakfast.
The ingredients
Vegan butter and milk makes this tofu extra creamy and smooth. I’ve seasoned the scramble with plenty of salt, garlic and nutritional yeast for a lovely eggy and subtly cheesy flavour. Honestly, this recipe so closely resembles egg scramble that it may raise a few dubious eyebrows. Omnivores will definitely be pleased! Don’t be put of by the use of turmeric, it is used just to add colour; I promise you won’t be able to taste any spice!
The method
The buttery tofu has the best melt in your mouth texture. Use a fork to delicately crumble the tofu. There is no need to press the tofu making this recipe even easier. Heat the saucepan over a moderate heat and melt the margarine until aromatic and frothing. Please don’t use oil in place of the margarine, if you really want a buttery, creamy easy tofu scramble then you must use butter! Serve on toasted sourdough and your choice of veggies. I like to add mushrooms and red pepper for an earthy and sweet flavour double punch. And us Brits know that baked beans is always a winner with any scramble.

Easy tofu scramble
Ingredients
- 200 g firm tofu
- 1 tbsp vegan margarine or butter
- 1 tbsp nutritional yeast
- 1/4 tsp garlic granules
- 1/4 tsp salt
- 1/8 tsp turmeric
- Black pepper to season
- 1 tbsp unsweetened oat milk
Instructions
- Drain the tofu and place in a bowl. Use a fork to gently mash the tofu.
- Heat a non stick frying pan over a moderate heat and melt the butter.
- Add the crumbled tofu, nutritional yeast, garlic granules, salt, turmeric and black pepper and cook for 2 minutes.
- Pour in the oat milk. Cook for a further 3 minutes, stirring occasionally.
- Serve on toasted sourdough and if desired, sprinkle with chopped chives.
