A nourishing salad made with crisp green leaves, sweetcorn, strawberries and a creamy mint avocado dressing. With healthy fats from the avocado and sunflower seeds, this Strawberry and Avocado Summer Salad salad is skin nourishing, hormone balancing and most importantly super delicious.
The ingredients
Fresh, seasonal crisp salad is what summer is all about. This goddess salad is no different. I call it that because it’s loaded with heart healthy and skin nourishing omega 3s.
Crunchy lettuce, plump juicy strawberries and crisp corn are all crammed into this salad, and that’s before you get to the mint-lime-avocado dressing. This is the summer dressing that will perk up the limpest of salads. The base is made with creamy avocado and lime juice. Finish with fresh mint to make the most divine of dressings.
Why I am now eating all the fats
I used to forego all the fat; no oil based dressing, no nut butter with oats, no full fat yoghurt yada yada. I grew up with 90s diet culture where any fat was at best met with scepticism and at worst seen as satan’s spawn. Anyways I’m now of a certain age (!) and have learnt the importance fat has in our diet. Fat provides energy, reduces inflammation, balances blood sugar and regulates our hormones. Excuse me while I eat my peanut butter from the jar.
Our bodies cannot produce essential fatty acids so its vital we get it from our food. I’m now all about the creamy avo dressing and heapings of peanut butter. Excuse me while I eat my peanut butter from the jar.

Strawberry and Avocado Summer Salad
Ingredients
- 180 g strawberries finely sliced
- 200 g sweetcorn drained and rinsed
- 90 g cucumber finely sliced
- 60 g iceberg lettuce roughly sliced
- 40 g spinach roughly torn
- 1 tbsp sunflower seeds
For the dressing
- 1 avocado
- 1/2 lime juiced
- 4 tbsp water
- 5 mint leaves finely chopped
- Generous pinch of salt
Instructions
- Add the strawberries, sweetcorn, cucumber, lettuce and spinach to a large serving bowl.
- Combine the ingredients for the dressing in a bowl. Mash the avocado to a pulp consistency and mix well with the remaining ingredients. Pour over the salad, scatter over the seeds and toss to combine.
- Taste and season with salt as required.
