A grilled sandwich is one of life’s simple pleasures. Here we have a quick brunch recipe for a grilled peanut butter banana sandwich. Perfect for those times when you have a craving for something sweet and indulgent that must be satisfied immediately!

Peanut butter and banana is a classic flavour combination. However peanut butter can be seen as a tad basic or should I say unsophisticated, but I hold no such pretensions. Instead of sugar I’ve added a spoonful of maple syrup which offers a richer, caramel like sweetness. Drizzle with melted velvety dark chocolate and this simple grilled sandwich is elevated to pure euphoric levels. And I’m not one to exaggerate.

Spread both sides of the sandwich with margarine and squash down on the grill to make the peanut butter and banana extra gooey. A word of warning – the mouthwatering smell of warm maple syrup and grilled sticky banana will beckon from the kitchen having everyone in the near vicinity reaching for your heavenly creation.

Grilled peanut butter banana sandwich
Ingredients
- 1 ripe banana
- 1/4 tsp margarine
- 1.5 tsp maple syrup
- 2 slices bread
- 2.5 tbsp peanut butter
- 1.5 squares dark chocolate 15g
Instructions
- Trim the banana stalks and cut lenghways keeping the peel on.
- In a saucepan heat the maple syrup and margarine until it starts to simmer. Then brush the cut sides of the banana with a little of the maple syrup mixture.
- Heat a griddle pan over a high heat. Place the banana cut side down onto the pan and grill for 2 minutes. Turn over and grill peel side down for a further minute. Remove from the pan and carefully remove the peel.
- Spread the peanut butter on 1 slice of bread, top with the banana, remaining syrup, melted dark chocolate and slice of bread. Lightly spread margarine on the top and bottom of the sandwich.
- Place the sandwich onto the griddle pan over a medium heat. Grill for 2 minutes on each side until golden brown and toasted to perfection.
