A healthy recipe for Crunchy Peanut Butter Granola made with maple, vanilla and wholegrain, jumbo oats. Devour with probiotic laden kefir or creamy natural yoghurt for a deliciously healthy start to your day.
The ingredients
This recipe who uses wholegrain, uncut oats which are super nutritious. Oats are high in the soluble fibre beta gluten which promotes healthy gut bacteria, aids digestion, and balances blood sugars. Such a humble ingredient and yet it provides so many benefits!
The current trend is for all things peanut butter flavoured and I more than happy to indulge. I’ve not only added moreish crunchy peanut butter to this recipe, but also roasted peanuts.
The granola is sweetened with maple syrup which lends a rich, warm caramel flavour. Plus it makes the recipe refined sugar free making it a more nutritious start to your day.
Now for the star ingredients – nuts and lots of them. I’ve doubled up on the nuts and used roasted peanuts and crunchy peanut butter for the ultimate Crunchy Peanut Butter Granola. Scatter through dried banana chips for extra crunch. Oh and it has to be crunchy peanut butter. I won’t allow the other variety through my front door
How to get clusters in granola
I’ve only gone and done it. I have the found the secret to super crunchy granola with pockets of clusters. The university degree has finally paid off! The chunky clusters are easily the best part of any granola. My top tip is to evenly spread the syrupy oat mixture onto a baking tray and press down firmly. Bake and allow to cool completely (patience, guys) before breaking apart and devouring. This creates those deliciously huge clusters every single time.

Crunchy Peanut Butter Granola
Ingredients
- 280 g jumbo whole oats GF oats if required
- 100 g unsalted peanuts
- 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
- 120 g crunchy peanut butter
- 100 ml maple syrup
- 30 ml rapeseed oil
- 1 tsp vanilla extract
- 70 g dried banana chips
Instructions
- Heat the oven to 170C / 150C fan.
- In a large bowl, mix together the jumbo oats, unsalted peanuts, salt and cinnamon.
- Whisk together the peanut butter, oil, maple syrup and vanilla.
- Combine the dry and wet ingredients. Mix until the oats are well coated.
- Spread the mixture evenly onto 2 -3 baking trays and press down with the back of a spoon.
- Bake the granola for 15 minutes until lightly browned.
- Remove from the oven and allow to cool completely. Once cooled break apart into clusters and stir in the banana chips.
