This garlicky Edamame and Mint Dip is high in plant based protein, healthy fats and fibre. Plus it only takes 10 minutes to prepare. This dip makes for a healthy and delicious vegan snack served with pitta or just scoop it by the spoon as I do!
Fat Is Where It’s At
Edamame is high in both fibre and protein making it a great addition to those of us eating a plant based diet. The healthy fats come from the olive oil and nutty tahini. Pair with wholemeal bread or crackers and you have yourself a balanced, nutritious snack.
Fat is nothing to be scared of. Say goodbye to 90’s diet culture, which banished all things fat (and delicious). Instead say hello to nourishing, skin loving foods. Vanity aside healthy fats aren’t just great for our skin and nails, they also help contribute to good heart health, provide energy and help regulate our hormones. Avocado, seeds, nut butters, olive oil and tahini are all amazing sources of healthy fats.
The method
This Edamame and Mint Dip is deceptively easy to prepare. Add the frozen edamame to a pan of boiling water then simmer for 4 minutes.
Meanwhile while the edamame is cooking add the remaining ingredients to a food processor. Return to the edamame, drain in a colander and rinse with cold water. No-one appreciates being served a warm dip!
Add the edamame to the food processor, reserving a few whole edamame beans to serve. Blitz for 30 seconds, stop and scrape down the sides then blitz for another 30 seconds or until you have a thick, smooth consistency. Serve and drizzle over olive oil and scatter over the remaining edamame and mint leaves.

Edamame and Mint Dip
Ingredients
- 300 g frozen edamame / soya beans
- 2 tbsp tahini
- 1 tbsp extra virgin olive oil
- 2 garlic cloves minced
- 8 mint leaves finely chopped
- 1/2 lemon juiced
- 1/2 tsp salt
- 150 mls water
Instructions
- Bring a saucepan of water to the boil. Add the edamame, return to the boil then simmer for 4 minutes.
