Peanut butter and jam porridge
A winning combination of peanut butter and jam to make the ultimate easy vegan breakfast. Full of texture and flavour, this breakfast will be gone in minutes!
Servings: 1
Ingredients
- 40 g jumbo / steel cut oats
- 250 mls unsweetened oat milk
- 1.5 tbsp crunchy peanut butter
- 1/4 tsp vanilla
- Good pinch of salt
- 20 g peanuts roughly chopped
For the chia strawberry jam
- 85 g strawberries
- 1 tsp lemon juice
- 1 tsp chia seeds
- 1 tsp maple syrup
- Toasted coconut chips to garnish
Instructions
- Add the strawberries to a saucepan with 3 tbsp of water and the lemon juice. Bring to a gentle boil, then reduce the heat to low and simmer for 10 minutes.
- Meanwhile add the oats, oat milk, peanut butter, vanilla and salt to a saucepan. Cook over a moderate heat for 5 minutes until the oats have doubled in size.
- Remove the strawberries from the heat and stir in the chia seeds and maple syrup.
- Serve the porridge and top with the strawberry jam, strawberries, chopped peanuts and if desired, toasted coconut chips.
