Guacamole is a healthy, vibrant and versatile dip that is quick and easy to make. Combine perfectly ripe and creamy avocados, punchy chilli peppers, lime, red onion and then serve alongside tortilla crisps for the ultimate dip that is full of flavour. This recipe is bursting with fresh ingredients and healthy fats. Use this easy guacamole as a dip, topping or accompaniment to a variety of dishes or just go ahead and eat by the spoonful. I promise I won’t judge!
The avocado
This guacamole is the perfect combination of textures. I like to leave a few larger chunks of avocado and mash the rest to a creamy consistency. Whilst the addition of the onion and tomato lends an extra crunch. This recipe really gets a kick from the two types of pepper. Initially I was using just red chilli but found it to be lacking that extra heat. The cayenne really adds a fiery depth to the dip – just be sure to go easy, as a pinch really is sufficient.
The pairings
This is a simple, fuss free recipe that can be assembled in minutes and is the perfect vegan accompaniment to so many dishes – just spoon on to chilli, nachos, fajitas or you can use as a spread for the ever ubiquitous avocado on toast. The vibrant green, red and purple add some much needed colour and freshness to a lot of the beige foods guacamole is often paired with.
The aromatics
Guacamole is perfect in its simplicity with each ingredient really complementing and enhancing the next. It has the holy trinity of salt, fat and acid. The ripe buttery avocados are mild enough to allow the citrus and chilli elements of the dish to come through. The onions and lime add a pleasant tang which is nicely balanced with the heat from the chillies. Use fresh ingredients to ensure the best flavour and colour. This recipe is especially appealing on those hot summer days when we all want something quick, fresh and healthy.
Helpful tips
– This recipe is easily adaptable. Just taste as you go along and add more or less of whatever takes your fancy.
– Best eaten immediately before the avocado starts to brown.
– Use both the coriander leaves and stalks. The stalks are just as flavourful and it also helps keep waste to a minimum.
– Choose firm but ripe avocados – they should yield under slight pressure.

Easy guacamole
Ingredients
- 3 ripe avocados
- 1 vine ripened tomato
- Juice from 1 & 1/2 limes
- 1 small red onion
- 2 tbsp coriander finely chopped
- 1 red chilli
- Cayenne pepper
- Salt and pepper
Instructions
- Halve the avocados lengthways and remove the stones. Cut into cubes and scoop out into a large bowl. Roughly mash the avocado leaving some larger chunks intact.
- Finely dice the onion and tomato. Halve the red chilli, remove the seeds and finely chop and add to the bowl.
- Next add a good pinch of cayenne pepper, lime juice, chopped coriander, salt and pepper.
- Gently combine all ingredients ensuring a few of the avocado chunks remain. Season according to taste.
