Sweet potato wedges

Buttery soft sweet potato wedges seasoned with smoked paprika, soft brown sugar and garlic. A quick roast in the oven and the sweet spicy wedges are ready to be devoured as a snack or paired with savoury dishes.

Ingredients

  • 2 large sweet potatoes washed and dried
  • 3 teaspoons light brown soft sugar
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon garlic granules
  • 1/4 teaspoon salt
  • Black pepper a pinch
  • 1 tablespoon olive oil

Instructions

  • Pre heat the oven to 200°C/ fan 180°C / Gas 6 and line a baking tray with foil.
  • Prepare the wedges by cutting the potato lengthways into quarters.
  • In a large bowl add the potato and all the seasonings.
  • Drizzle over the olive oil and with a spoon mix together all the ingredients. Then use your hands to gently massage the seasoning mix into the sweet potatoes ensuing the wedges are evenly coated.
  • Place the wedges with the orange fleshy part facing down on the tray.
  • Bake for 25-30 minutes, pricking with a knife to check the wedges are soft and buttery.
