Sweet potato wedges
Buttery soft sweet potato wedges seasoned with smoked paprika, soft brown sugar and garlic. A quick roast in the oven and the sweet spicy wedges are ready to be devoured as a snack or paired with savoury dishes.

- 2 large sweet potatoes washed and dried
- 3 teaspoons light brown soft sugar
- 2 teaspoons smoked paprika
- 1/2 teaspoon garlic granules
- 1/4 teaspoon salt
- Black pepper a pinch
- 1 tablespoon olive oil
Pre heat the oven to 200°C/ fan 180°C / Gas 6 and line a baking tray with foil.
Prepare the wedges by cutting the potato lengthways into quarters.
In a large bowl add the potato and all the seasonings.
Drizzle over the olive oil and with a spoon mix together all the ingredients. Then use your hands to gently massage the seasoning mix into the sweet potatoes ensuing the wedges are evenly coated.
Place the wedges with the orange fleshy part facing down on the tray.
Bake for 25-30 minutes, pricking with a knife to check the wedges are soft and buttery.
