Strawberry and Avocado Summer Salad

A nourishing salad made with crisp green leaves, sweetcorn, strawberries and a creamy mint avocado dressing.

Ingredients

  • 180 g strawberries finely sliced
  • 200 g sweetcorn drained and rinsed
  • 90 g cucumber finely sliced
  • 60 g iceberg lettuce roughly sliced
  • 40 g spinach roughly torn
  • 1 tbsp sunflower seeds

For the dressing

  • 1 avocado
  • 1/2 lime juiced
  • 4 tbsp water
  • 5 mint leaves finely chopped
  • Generous pinch of salt

Instructions

  • Add the strawberries, sweetcorn, cucumber, lettuce and spinach to a large serving bowl.
  • Combine the ingredients for the dressing in a bowl. Mash the avocado to a pulp consistency and mix well with the remaining ingredients. Pour over the salad, scatter over the seeds and toss to combine.
  • Taste and season with salt as required.
