Strawberry and Avocado Summer Salad
A nourishing salad made with crisp green leaves, sweetcorn, strawberries and a creamy mint avocado dressing.

- 180 g strawberries finely sliced
- 200 g sweetcorn drained and rinsed
- 90 g cucumber finely sliced
- 60 g iceberg lettuce roughly sliced
- 40 g spinach roughly torn
- 1 tbsp sunflower seeds
For the dressing
- 1 avocado
- 1/2 lime juiced
- 4 tbsp water
- 5 mint leaves finely chopped
- Generous pinch of salt
Add the strawberries, sweetcorn, cucumber, lettuce and spinach to a large serving bowl.
Combine the ingredients for the dressing in a bowl. Mash the avocado to a pulp consistency and mix well with the remaining ingredients. Pour over the salad, scatter over the seeds and toss to combine.
Taste and season with salt as required.
