Peanut butter and jam porridge

- 40 g jumbo / steel cut oats
- 250 mls unsweetened oat milk
- 1.5 tbsp crunchy peanut butter
- 1/4 tsp vanilla
- Good pinch of salt
- 20 g peanuts roughly chopped
For the chia strawberry jam
- 85 g strawberries
- 1 tsp lemon juice
- 1 tsp chia seeds
- 1 tsp maple syrup
- Toasted coconut chips to garnish
Add the strawberries to a saucepan with 3 tbsp of water and the lemon juice. Bring to a gentle boil, then reduce the heat to low and simmer for 10 minutes.
Meanwhile add the oats, oat milk, peanut butter, vanilla and salt to a saucepan. Cook over a moderate heat for 5 minutes until the oats have doubled in size.
Remove the strawberries from the heat and stir in the chia seeds and maple syrup.
Serve the porridge and top with the strawberry jam, strawberries, chopped peanuts and if desired, toasted coconut chips.
