Maple & nut granola
Lightly sweetened granola made with jumbo oats, cornflakes and peanut butter. This maple and nut granola is full of nutty, crunchy clusters.

- 3 tbsp margarine
- 80 g jumbo oats
- 50 g gluten free corn flakes
- 50 g maple syrup
- 2 tbsp peanut butter
- 2 tbsp chia seeds
- 40 g brazil nuts roughly chopped
- 20 g pumpkin seeds
Line a 20×20 brownie tin with baking parchment.
Pre heat the oven to 200 C / 180 C fan.
Melt the margarine in the microwave 10 seconds. Add all the ingredients for the granola into a mixing bowl. Stir well ensuring the mixture is well combined.
Scrape the granola out into the baking tin. Press the granola firmly into the tin using the back of a spoon. Place in the oven and bake for 15 minutes.
Remove from the oven and allow to cool completely in the tin. Then turn out the granola onto a chopping board and gently break up into clusters.
