Edamame and Mint Dip

- 300 g frozen edamame / soya beans
- 2 tbsp tahini
- 1 tbsp extra virgin olive oil
- 2 garlic cloves minced
- 8 mint leaves finely chopped
- 1/2 lemon juiced
- 1/2 tsp salt
- 150 mls water
Bring a saucepan of water to the boil. Add the edamame, return to the boil then simmer for 4 minutes.
Meanwhile while the edamame is cooking, prepare the remaining ingredients and add to a food processor.
Return to the edamame. Drain in a colander and rinse with cold water. Add to the food processor, reserving a few whole edamame beans to serve.
Blitz for 30 seconds, stop and scrape down the sides then blitz for another 30 seconds or until you have a thick, smooth consistency.
Serve and drizzle with olive oil and scatter over the remaining edamame and mint leaves.
