Edamame and Mint Dip

This garlicky Edamame and Mint Dip is high in plant based protein, healthy fats and fibre.

Ingredients

  • 300 g frozen edamame / soya beans
  • 2 tbsp tahini
  • 1 tbsp extra virgin olive oil
  • 2 garlic cloves minced
  • 8 mint leaves finely chopped
  • 1/2 lemon juiced
  • 1/2 tsp salt
  • 150 mls water

Instructions

  • Bring a saucepan of water to the boil. Add the edamame, return to the boil then simmer for 4 minutes.
  • Meanwhile while the edamame is cooking, prepare the remaining ingredients and add to a food processor.
  • Return to the edamame. Drain in a colander and rinse with cold water. Add to the food processor, reserving a few whole edamame beans to serve.
  • Blitz for 30 seconds, stop and scrape down the sides then blitz for another 30 seconds or until you have a thick, smooth consistency.
  • Serve and drizzle with olive oil and scatter over the remaining edamame and mint leaves.
