Easy tofu scramble
A delicious buttery tofu scramble with a spot on eggy flavour. Perfect served on toasted sordough for a healthy plant based breakfast or brunch.

- 200 g firm tofu
- 1 tbsp vegan margarine or butter
- 1 tbsp nutritional yeast
- 1/4 tsp garlic granules
- 1/4 tsp salt
- 1/8 tsp turmeric
- Black pepper to season
- 1 tbsp unsweetened oat milk
Drain the tofu and place in a bowl. Use a fork to gently mash the tofu.
Heat a non stick frying pan over a moderate heat and melt the butter.
Add the crumbled tofu, nutritional yeast, garlic granules, salt, turmeric and black pepper and cook for 2 minutes.
Pour in the oat milk. Cook for a further 3 minutes, stirring occasionally.
Serve on toasted sourdough and if desired, sprinkle with chopped chives.
