Easy guacamole

- 3 ripe avocados
- 1 vine ripened tomato
- Juice from 1 & 1/2 limes
- 1 small red onion
- 2 tbsp coriander finely chopped
- 1 red chilli
- Cayenne pepper
- Salt and pepper
Halve the avocados lengthways and remove the stones. Cut into cubes and scoop out into a large bowl. Roughly mash the avocado leaving some larger chunks intact.
Finely dice the onion and tomato. Halve the red chilli, remove the seeds and finely chop and add to the bowl.
Next add a good pinch of cayenne pepper, lime juice, chopped coriander, salt and pepper.
Gently combine all ingredients ensuring a few of the avocado chunks remain. Season according to taste.
